Final Round

12 participants from each category will be shortlisted and will proceed to the Final Round. DurianBB Musang King Paste will be provided where the finalists will have to provide and prepare the rest of the ingredients based on the recipe. Finalists are required to prepare four (4) portions, one for display, three for tasting. Finalists will be provided with the following:

  • Fully Equipped Kitchen
    • Working Table Top with attached Chiller
    • Shared Oven
    • Table Top Mixer
  • Display table of 60cm x 110cm
  • DurianBB Musang King Paste

Participants are required to provide their own ingredients, cooking utensils, cooking apparatuses and chinaware for the competition. Finalists are also required to stay for the awarding ceremony. A menu card is to be displayed on the table, whereas the recipe is to be prepared for the judges on that day.

Participants are required to prepare four (4) portions within 60 minutes. Base items such as tart base, sponge cake and any items that require long baking process can be made in advance and brought in, to reduce the workload and time of competition.

Note: The event details will be decided upon shortlisting Finalists. Finalists are to register one (1) hour prior to the competition. No logos are permitted on uniforms.

JUDGING CRITERIA

Mise-en-place / Materials brought 0 – 10 points

Clear arrangement of materials, clean working place, proper working position, clean uniforms or outfits, and proper techniques.

Presentation & Innovation 0 – 40 points

Dessert and garnishing must be in harmony. The combination of creation must be excellent.  Modern and Innovative desserts will be granted points.

Taste & Texture 0 – 50 points

The end product should harmonise well with the DurianBB Musang King Paste. In quality, flavour and colour, the dessert should conform to today’s standard and nutritional values. Food additives are strictly not permitted.
